Tasty Tuesday: Frozen Chocolate-Mint Meltaways (and a cooking contest!)

Robb Wolf is one of my favorite authorities on the “Paleo” way of life. I love food and I love cooking and I love Paleo, so you can imagine my excitement when I saw that Robb’s site is hosting a “Paleo Holiday Recipe Contest!”  With prizes that are guaranteed to be “kick-ass!” I don’t know what the prizes are yet, but I want me one (or two?).

Here is my entry for the “Desserts” category: Frozen Chocolate-Mint Meltaways. Melt-in-your-mouth fabulousness. Reminiscent of mint chocolate chip ice cream and mint-chocolate Girl Scout Cookies. I’ll probably hassle you with another post in the near future to vote for my recipe(s) on Robb’s site, but I wanted to give you a little sneak peek before the entry deadline on December 11th.

Frozen Chocolate-Mint Meltaways

serves 10

For frozen “meltaway” layer:

  • 1/2 cup creamy Sunbutter
  • 1/2 cup coconut oil
  • pinch of salt
  • 1/4 cup agave nectar
  • 1/2 tsp vanilla extract
  • 2 tsp peppermint extract

For topping:

  • 1/2 cup semisweet (or dark) chocolate chips
  • 2 tsp coconut oil

Instructions:

In glass bowl, combine Sunbutter, 1/2 cup coconut oil, and salt. Microwave for 60 seconds (until melted) and stir well to combine. Add agave, vanilla, and mint extract and stir well to blend. Line a loaf pan (8×4 inch) with wax or parchment paper. Pour in mixture. Freeze for approx 30 minutes until firm. Meanwhile, melt chocolate chips and 2 tsp coconut oil for 60 seconds in microwave. Stir, then microwave for another 15-20 seconds. Stir until smooth. Drizzle chocolate over frozen fudge layer, then drag a toothpick in diagonal lines to make it look fancy. Freeze for another 30 minutes until set. Cut into desired number of servings (I cut 10 pieces) and serve right away. Leftovers need to be stored in the freezer.
