Day 3: Bri’s Cavegirl Crunch

There may not be anything better than the smell of honey, vanilla, and macadamia nuts. It infused my kitchen with the warm aroma of love and coziness for hours… And then I ate it.

This recipe is based on the Civilized Caveman’s “Caveman Crunch” recipe… I tweaked it just a bit — hopefully enough to change the gender to Bri’s Cavegirl Crunch.

Ingredients:

  • 1/2 cup raw sunflower seeds
  • 1/2 cup raw pumpkin seeds
  • 1 cup almond meal
  • 1 cup shredded unsweetened coconut
  • 2 cups coarsely chopped almonds
  • 1/2 – 3/4 cup coarsely chopped macadamia nuts
  • pinch of salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup honey
  • 2 tsp vanilla
  • 1 tsp coconut extract

Directions:

  1. Preheat oven to 300 degrees F.
  2. Place all dry ingredients in LARGE mixing bowl.
  3. In small bowl, mix melted coconut oil, honey, vanilla, and coconut extract. Pour over dry ingredients and mix well until thoroughly coated/combined (you may want to use your hands).
  4. Spread mixture in single layer on one large (or two smaller) baking sheets that have been lined with parchment paper.
  5. Bake for 25 minutes. Remove from oven and stir/turn. Bake for 20 minutes. Remove from oven and stir/turn. Put back in oven, but then turn the oven OFF. Let granola sit in oven until oven returns to room temperature (or at least 20 minutes). Granola will crisp as it cools.
  6. Serve with almond milk or atop non-dairy yogurt… Yum.
