Craving a healthy breakfast that will stick to your ribs and boost your immune system to boot? Try my gluten free blender pancakes (protein-rich, refined sugar free)! They’re great on their own, but drizzling them with On Guard infused honey takes them to the next level!

These are easy enough to whip up before school for your kiddos (and for you). It makes a big batch; leftovers store nicely.

NOTES: I added cinnamon essential oil to the batter because it adds a touch of natural sweetness and it may help stabilize blood sugar. Collagen peptides are used to boost the protein content, along with the almond flour.

Gluten Free Blender Pancakes – Banana Cinnamon

Ingredients:
– 2 medium bananas (chunked into 2 or 3 pieces each)
– 2 eggs
– 1 cup Bob’s Red Mill Gluten Free Pancake Mix (really, you can use ANY pancake mix that contains flours and leavener)
– 3/4 cup blanched almond flour
– 2 Tbsp collagen peptides (I use Vital Proteins Collagen Peptides)
– 1 cup nondairy milk
– 1 tsp pure vanilla extract
– 2 drops pure, therapeutic grade cinnamon bark EO*

Add ALL INGREDIENTS to your blender or food processor. Start on low, then increase to high. If using a high speed blender (i.e. Vitamix) you’ll probably want to use the tamper to get things moving!

Blend until completely smooth.

Cook small (3-4″) pancakes on lightly oiled griddle over medium heat. I like to use grassfed ghee, but coconut oil or avocado oil work well too. Almond flour burns quickly, so watch carefully!

Makes 12-14 small pancakes (serves 4-5).

On Guard Honey Topping:

– 3 Tbsp creamy local honey
– 2 drops doTERRA On Guard EO* (if you don’t have this, you can use 1-2 drops cinnamon bark EO here as well… But On Guard tastes like CHRISTMAS and it’s so great for your immune system!)

Gently warm honey until it’s runny, but not overly hot. Add essential oils. Stir well. Drizzle over pancakes. SUPER DELIGHTFUL when you top your pancakes with On Guard infused honey AND a few teaspoons of blanched almond butter

If you have leftover honey, use it on toast or to sweeten your tea. Yum!
