Bittersweet Peppermint Truffles

Smooth, rich, and creamy with little morsels of chewyness from the finely chopped dates!

  • 8 large, plump Medjool dates, pitted (or 10 smaller dates; soak in hot water for 5-10 minutes and then drain completely if they are dry)
  • 1 heaping cup cooked sweet potato flesh (I recommend steaming chunks of peeled sweet potato, and then cooling)
  • 1/4 cup coconut oil or coconut butter/manna
  • 1/4 cup unsweetened cacao powder, PLUS an additional 1/4 – 1/3 cup for coating
  • 1/8 tsp sea salt
  • 1/2 tsp pure vanilla extract
  • 4-5 drops certified pure, therapeutic grade Peppermint EO (no oils? try subbing 1/2 – 3/4 tsp pure peppermint extract)

Place pitted dates in food processor and process until finely chopped.

Process on high, scraping the sides once or twice, until completely blended and smooth. Scrape mixture into a bowl and refrigerate for 1 hour (or more) to firm up.

When slightly firm, take tablespoonfuls of the mixture and lightly roll between your palms into truffle-sized balls.

Place balls in a shallow bowl/dish with additional 1/4 – 1/3 cup of cacao powder. Gently roll/toss until coated. Remove coated balls to a serving dish (see FIRST IMAGE in this blog post for the finished product!).

Store in fridge until ready to eat. Can also be frozen.

Healthy Hot Chocolate

Low sugar, Gluten Free, Dairy Free! | FemFusion FitnessBlend dates and water on high until smooth. NOTE: the picture at left shows the size and plumpness of the Medjool dates that I used in these recipes.

Add coconut oil (or MCT oil), cacao, vanilla, salt, gelatin (or peptides), and sweetener to the date/water mixture in the blender. Blend again on high.

Pour into a saucepan over medium heat. Add milk, whisk well. When hot (but not boiling), remove saucepan from heat. Add additional sweetener (only if needed) and briskly whisk in the peppermint essential oil. Divide between 3 – 4 mugs, and serve hot!

Variations: Replace water with brewed coffee and omit peppermint EO for “Mocha.” Replace peppermint EO with 2-3 oz. peppermint schnapps for an adult variation!
